Known for its emotionally resonant approach to modern Greek cuisine, Maitr & Margarita has already carved a name for itself through its first successful collaboration with Domes. Now, this gastronomic project finds its next expression in Santorini’s raw elegance. Led by chef Sokratis Beliyannis and sommelier Roi Apoikou, the culinary experience at Domes Novos Santorini speaks a language that is both earthy and refined.

The seasonal menu draws from Cycladic tradition, reshaping the flavors of the Aegean through a lens of personal memory and local terroir. From indigenous cheeses and island meats to fresh-caught fish and herbs from the volcanic soil, each plate is a conversation between past and present. Complementing the dishes is a thoughtfully curated wine list built exclusively on Greek labels, featuring rare finds from Santorini and biodynamic, small-batch selections that echo the authenticity of the land.

The restaurant space unfolds across two levels, with its rooftop offering sweeping views of the sea and sky—transforming each meal into a multisensory experience. But it’s not just the table that tells the story. The hotel itself, opened in April 2024, is a retreat shaped by nature and intention.

With architecture inspired by the island’s rebirth after its volcanic eruption, Domes Novos Santorini celebrates quiet transformation. Fifty suites and two villas, all with private pools and terraces, look out over the caldera, the Aegean, and the sun-drenched vineyards. Interior designer Olivia Siskou and KCP Architects have crafted a space where Cycladic simplicity meets grounded luxury, wrapped in terracotta hues and volcanic textures.

From underground spa pools and meditative yoga sessions in the vineyards to interactive cooking classes and local wine tours, every moment at Domes Novos Santorini invites guests to slow down—and go deeper.
